Easy, Healthy and Not Boring: The Perfect Brussels Sprout Salad for Summer
Salads no longer have to be boring with this Shaved Brussels Sprout Salad. The apples and grapes add a crisp sweet bite while the dressing adds a touch of bitterness.
Rich in vitamins K, C, A, and omega-3 fatty acids, Brussels sprouts are an excellent source of dietary fiber. Fiber is the key to slowing the absorption of food; the higher the fiber content of the meal, the longer your body must work to break it down. Fiber leaves you satiated longer, and also reduces your appetite. Get creative and make a salad out of raw Brussels sprouts rather than roasting them.

2 cups Brussels sprouts

salt and pepper to taste
(great with champagne vinegar as well)

Blend until leaves are completely shredded. Add green apple to food processor, then grapes, then cheese. Shred each ingredient separately before adding the next ingredient.
