Sweet Potato Spice Cookies2

Sweet Potato Spice Bites
(Makes approximately two dozen bites)

Ingredients:
1.5 cup gluten-free rolled oats
1/4 cup ground flax seeds
2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup sweet-potato puree (from the can is fine)
¼ cup. almond butter
2 Tbs. pure maple syrup
2/3 cup chopped dates
1/2 cup unsweetened shredded coconut

Directions:
1. Mix oats, ground flax seeds, and spices in a large bowl.
2. In a separate bowl combine the sweet-potato puree, almond butter, and maple syrup. Stir until well incorporated. Add wet ingredients to the dry ingredients and fold in the dates. Cover the bowl with plastic wrap and refrigerate for about 1 hour.
3. Place shredded coconut on a plate. Once the batter has chilled and is easy to work with, roll into uniform balls. Roll each ball in the shredded coconut. Store bites in the refrigerator or freezer and thaw for a minute or two before enjoying.

  1. These are amazing! I did the same thing Sadie did and added a little vanilla and pinch of sea salt. They’re my new go-to for a quick pick me up between meetings or when I only have ten minutes in between teaching classes. So fall. So good.

  2. I threw the ingredients in the food processor. I also omitted the cloves and added a little black strap molasses, vanilla, and sea salt. Kid approved!
