Summertime is such a freeing time of year. BBQs, pool parties, and spontaneous trips to the beach all make for perfect moments to be paired with warm summer nights. If you’re enjoying these warmer months as much as the weatherman pointing out the days of sunshine, you’ll more than likely come across the proposition to host a summer dinner party at your house. As feelings of anxiety might loom overhead, don’t fret; this panini will do the trick to solve any last minute menu woes.

It can be made with sourdough bread (which is easy on gluten free stomachs), or with traditional gluten free bread and since the panini press doesn’t omit too much heat, you can bypass turning on the stove. Pair this sandwich with a garlic-y kale salad and a crisp glass of white wine. Dessert can be incorporated by making a no-bake dish, or opting for the traditional route of ice cream and chocolate chip cookies.

The preparation and construction of this sandwich is quite simple. With protein rich ingredients like prosciutto and Brie cheese, this buttery concoction both satisfies and nourishes. If you don’t have a panini press on hand, a waffle maker will do just fine. The ingredients, although they may sound expensive, are actually very reasonable in price.

Prosciutto, Brie + Fig Jam Panini (Serves 2)

Ingredients:
Four slices gluten free bread
1 tbsp grass-fed unsalted butter
2 tbsp fig jam, or alternatively fig butter
4 slices prosciutto ham
4 thin slices double cream Brie cheese
Fresh figs to taste, optional

Directions:
Pre-heat panini maker, or waffle griddle, as you assemble the sandwiches. Cover one side of bread heavily with butter, and repeat on the second piece of toast to make sure both sides cook evenly. To construct the inside, slather fig jam on opposite sides of the buttered bread slices. Lay Brie cheese on one piece of toast, and prosciutto on the other. Close the two pieces together and place on griddle until desired crispiness is acquired. Repeat until you’ve made sandwiches for everyone in your party. Before service, cut diagonally and serve as an appetizer or a main dish.
