I am blessed and lucky. My sweetheart is a kind, thoughtful, sweet, considerate, affectionate beautiful man who is also my best friend. He genuinely cares for my well-being. He brews and prepares my morning coffee perfectly every day without fail; he makes sure I’ve taken my daily vitamins, he helps me around the house, he does extra special sweet things for me and tells me he loves me throughout the day and tucks me in at night. We have a ritual that at the end of every day we turn off the screens and phones and spend time just hanging out and visiting with each other. It is a wonderful world that I live in and a large part of that is attributed to him. I chose well.
The other night he came home and the lights were low, candles were lit, the table was set with the good china, silver and fresh flowers with a nice bottle of wine in the ice bucket and a playlist of his favorite songs on the stereo. I saw him check his phone to look at the calendar, a curious look on his face. This man knows and remembers important things like birthdays, anniversaries and when Valentines Day is. He scratched his head and looked at me and said, “Did I miss a special occasion?” I replied, “No, it’s just an ordinary Tuesday. I just wanted to do something nice because every day with you is like Valentines Day.”
You see, I have been doing an assignment that requires me to keep a journal and write down something that I am thankful for every day. In doing this soul searching I have really come to realize exactly how rare and wonderful our life is together. I want never to forget that and I want to cherish each and every day we share for the rest of our lives.
I prepared Chicken with Bourbon Orange Cream Sauce and paired it with some seasoned angel hair pasta that we enjoyed by candlelight and it truly was a very romantic evening.

2 boneless, skinless chicken breasts pounded to 2” thick
½ C flour
2 T extra virgin olive oil
¼ tsp salt
¼ tsp pepper
1½ oz. orange liqueur
1½ oz. bourbon
½ C heavy cream
½ C mandarin oranges
¼ C chopped fresh chives
Mix flour, salt and pepper in a bowl. Dredge chicken breasts in flour mixture. In a sauté pan heat oil and brown chicken breasts on each side, approximately 3-5 minutes per side.
When chicken is golden on both sides add orange liqueur and bourbon. When the alcohol has evaporated, approximately 2 minutes later, reduce the heat to medium. Add heavy cream and mandarin oranges.
Once chicken is cooked through remove from the sauce to a plate. Continue to simmer the sauce until it is reduced by half, and then toss in fresh chives until they wilt.
Serve the sauce over the chicken breast and pair with seasoned angel hair pasta and a crisp salad of greens with a vinaigrette dressing.
