Pie season is officially upon us! This year we are determined to perfect our pie-making skills. That means no more pre-made crusts and expanding our repertoire beyond the traditional pumpkin pie.

If you’re looking for fun pies, check out our list of 20 interesting fall pie recipes to make this fall. Before we get started in the kitchen, we thought we’d do some research on just how to make the perfect pie. Without further ado, here are the best tips we could find.

Via Bon Appétit:

Bake your pie on the bottom rack of the oven in a glass baking dish. It will ensure the crust is baked to a golden brown color and the clear dish will allow you to see that color.

Via King Arthur Flour:

Be sure you’re cooking with the right type of flour. The lower the flour’s protein level, the more tender the crust.

Via Land O’Lakes:

Keep ingredients that are meant to be refrigerated very cold. Take your butter directly out of the fridge before use and use ice cubes to obtain freezing water.

Via Food & Wine:

If your dough gets too soft and flimsy while you’re rolling it, stick it back in the fridge for a few minutes.

Via Saveur:

Sprinkle any prepared fruit (cut apples, peaches, etc.) with sugar and let them sit for a few minutes. Then drain off any juice that runs. This will avoid a soggy crust.
