Beach Picnic Know-How

If you’re anything like me, when summer hits and you live by the beach you want nothing more than to be out in the warm sunshine embracing all the season has to offer. Waves crashing against the shore, high tides lapping waves against your feet, and the idea of gathering with friends comes to mind. High temperatures aside, there are major advantages to making the most of summer while it’s here. Planning outdoor activities — such as picnics — are one of them.

Not only that, but the feel of a beach picnic fits in perfectly with the casual, easy style that belongs to summer. Thinking of hosting your own beach picnic? Here are a few ways to dress yourself and your blanket:

Simple Foods
Creating a menu with foods that don’t need cooking and can last in the summer heat are perfect, like these pre-made sandwiches and raspberry tart.

Easy Tomato Sandwiches (via Art in the Find)
Ingredients:
1 loaf Brioche Bread (Cut into 1″ slices)
2- 3 Heirloom Tomatos (cut lengthwise into 1/4 ” slices,  2 pieces per sandwich)
1/2 lb to 1 lb. Buffalo Mozzarella (cut lengthwise, 2 pieces per sandwich)
Balsamic Vinegar
Salt
Pepper
Optional – Basil Leaves

Directions: 
Cut Brioche Bread into 1″ slices, Cut heirloom tomatoes into 1/4″ thick slices and lay over 1 slice of brioche bread per person.  Next cut buffalo mozzarella into 1/4″ slices and layer two pieces on top of tomato.  Finally, drizzle balsamic vinegar over mozzarella and top with a sprinkle of salt and pepper.  Cover with second slice of Brioche bread to close sandwich and wrap with parchment paper.  Tie with ribbon or other twine and you’ve got an easy tomato sandwich for any outdoor picnic!

Super Simple Raspberry Tart (via Caramelized Blog)
Ingredients:
1 frozen puff pastry sheet, thawed
1 cup raspberries
1 1/2 cups light cream cheese icing

Directions: 
Preheat oven to 400 degrees. Unroll pastry onto a baking sheet and bake until puffed and golden, about 12 minutes. Remove and cool for 15 minutes. Evenly spread icing over pastry, leaving a 1-inch border. Sprinkle raspberries generously over tart, and serve immediately.

Homemade Drinks
What comes to mind for summer drinks? Lemonade of course!  A simple lemonade will hold well throughout the day and you can create cocktails or mocktails with it.

Themed Decor
A simple nautical theme can be brought in with small details such as ribbon over plates, throws, even outfits. It makes your picnic beautiful, beachy, and chic with a few simple touches.

Comforts
Pillows, throws, baskets, and blankets all make for a comfortable, easy, and intimate gathering with friends.

Outfits
Following with a fabulous nautical theme, stripes are the perfect way to integrate a fun look into a beach setting. Add in some blues and creams and you’ve got yourself one stylish picnic.
